I am pretty sure that if Cupid could, he would sharpen his arrows and fuel himself with these overnight pomegranate oats for his big day. This may not sound like a very romantic breakfast, but for centuries, this antioxidant rich fruit has been linked with passion.
In a lot of story telling the pomegranate has been used as metaphor to represent forbidden love, true love and innocence. In one Greek legend, Hades tricks the goddess of innocence, Persephone, into eating pomegranate seeds, which forces her to retreat to the underworld for winter each year. William Shakespeare also used the symbolism of a pomegranate tree in Romeo and Juliet. In Iran today, pomegranates are still thought to be the fruit of love and fertility.
Of course in the healthy foodie world we know pomegranates to have incredible antioxidant properties and nutrients that nourish and nurture the body. Why not whip up this healthy recipe for Valentine’s Day and indulge in the fruits of paradise?
1 cup gluten free oats
2tsp chia seeds
2 cups of nut milk
A splash of vanilla essence
A pinch or two of cinnamon
1/2 cup pomegranate seeds
2tsp coconut sugar
Some shredded coconut
Some flaked almonds
Mix oats, chia seeds, nut milk, vanilla essence, cinnamon and divide equally in two bowls, cover and put in the fridge overnight.
In the morning, warm the oats gently in a saucepan for a few minutes and top with pomegranate. Transfer to a serving dish and top with the coconut sugar, shredded coconut, almonds and serve.
