Goldilocks Revenge: Beautiful Ways To Eat Oatmeal

We last left Goldilocks at odds with the oatmeal she’d found at the three bear’s cottage and she swore she’d have her bowl of oatmeal. Of course, years after this, Goldi would be furious when she discovered the whole ordeal had been turned into a story and every book had failed to mention that she couldn’t quite eat cow’s dairy and hadn’t stolen their oatmeal, let alone sit on their chairs and sleep in their beds! 

On that fateful day though, Goldi had to trudge all the way back through the forest hungry. On her way home Goldi stopped off at various farmers markets, picking up things like almonds, oats, fruits and roses for her oatmeal.

When she finally arrived home, spoilt for choice with all the different ingredients, she decided to make three different types of oatmeal. Yes, three different ways to eat oatmeal!

After all the effort she’d gone to – Goldi got really creative in the kitchen, adding all sorts of things to eat different pot of oatmeal. Of course if oats were to ever run out, we’d know whom to blame…


Beautiful Ways To Eat Oatmeal

 

The Rosy Bircher

Ingredients
  1. (Serves 1)
  2. 2tbsp chia seeds
  3. ½ cup of oats (gluten free)
  4. ½ a pear, grated
  5. 1tsp rose water
  6. ½ cup of coconut milk
  7. ½ cup of almond milk
Instructions
  1. Mix all the ingredients together and place in the fridge overnight.
  2. Serve warmed up in the morning.

Coco-Cran's Bliss

Ingredients
  1. ½ cup of oats (gluten free)
  2. ½ cup of coconut water
  3. ½ cup of almond milk (or more depending on how thick you like it)
  4. 1tbsp of shredded coconut
  5. 1tbsp hemp seeds
  6. 1tbsp buckwheat groats (soaked overnight, optional)
  7. 1tbsp chia seeds
  8. A handful of cranberries
  9. Some cacao nibs
  10. 1tbsp maple syrup (or more to taste)
Instructions
  1. In a saucepan on a medium heat, combine the oats, coconut water and almond milk together and bring the contents to a boil and then simmer until the porridge has thickened.
  2. Serve in a bowl with the toppings and maple syrup.

Lemon & Blueberry Crumble Oatmeal

Lemon & Blueberry Crumble Oatmeal

For the crumble topping (if using)
  1. 1tsp coconut oil
  2. 1tsp coconut sugar
  3. 1tsp gluten free flour
  4. 2tbsp oats
For the oatmeal
  1. ½ cup of blueberries
  2. 1tsp lemon zest
  3. 1tsp lemon juice
  4. 2tsp coconut sugar
  5. ½ cup of oats (gluten free)
  6. 1 cup almond milk
  7. 1tbsp ground flax seeds
  8. 2tbsp crumble topping (or 2tbsp granola)
Crumble Topping
  1. If making crumble topping, first preheat the oven to 375F and line a baking sheet with parchment paper.
  2. In a bowl, rub the coconut oil, coconut sugar, flour and oats together with your fingers until you get sandy oats. Spread out on the sheet and bake for about 15 minutes. Let them sit out on the counter to crisp up while you prepare the oatmeal.
Oatmeal
  1. In a small saucepan on a medium heat, bring the blueberries, lemon zest, lemon juice and coconut sugar to a boil and simmer until thickened.
  2. In another saucepan on a medium heat, combine the oats and almond milk together and bring the contents to a boil and then simmer until the porridge has thickened.
  3. Pour into a bowl and top with the lemon blueberry sauce, ground flax seeds and crumble topping.
