Since moving to Toronto, snowy Sundays have been reserved for brunching with pancakes, making a den on the couch and using the oven. I don’t think there is a sweeter smell than that of goods cooking in the oven, whether it be food roasting or treats baking and today the Bafta 2015 film awards.
I often get a bit glutton on Sunday, why not? However I have a whopping delivery of cold pressed juices arriving tonight for the week, so I thought a little virtue was in order.
We started the day with an Oh She Glows vegan pancake recipe. They end up looking a lot like his n’ hers superfood toppings. Banana, cacao nibs and hemp granola for him and blueberries, chia seeds and coconut for me, but both of us love our maple syrup.

4 small carrots, cut into chunks
2 beets, cut into wedges
400g sweet potato, cut into chunks
1 red onion cut into chunks
1tbsp coconut oil
1tsp coconut sugar
Himalayan pink salt to season
Pre-heat oven to 400F.
Smother the vegetables in the coconut oil and arrange in a roasting tin.
Season with the spices, sugar and salt. Bake for 30-40 minutes and serve alongside your favourite Sunday recipes.
