Breakfast of Champions: Chia Seeds

Mango & Coconut Chia Pudding

In my opinion every woman is fabulously busy, whether she’s a blogger, founding a startup or trying to juggle her own mini empire: studies, career, family & friends, relationships, life, hobbies… We all need more chia seeds in our life, the breakfast of champions!

Sometimes I think there are too many superfoods out there if you know what I mean? Yet, there are some that have earned a solid spot in my pantry all year round, cacao, wheatgrass and of course chia seeds.

These tiny seeds that swell in liquid can be found in South America, have been around for hundreds of years and were part of Aztec and Mayan staple diets. Chia got it’s name from the Mayan word for strength, Apache and Aztec warriors used to actually take them along on conquests. Chia seeds, thought to be ‘Indian Running Food’ because of how energizing they are, were used by warriors to sustain themselves. So if you’ve got a mammoth day ahead tuck into some chia seeds!

You can add chia seed to your breakfast in a number of ways, blitz it with your smoothie, throw it into your oatmeal, make some chia seed jam and spread it on your morning slice of toast or whip up a delicious chia seed pudding. Best part you can prepare it the night before (it takes 5 minutes) for a grab and go the next morning! I recently posted a pear and chia seed pudding (which is feature in the background of the photograph), this one is mango and coconut!

Ingredients
  1. (Serves 1)
  2. 3tbsp chia seeds
  3. 1/2 cup of almond milk
  4. 1/2 cup of coconut water
  5. 60g of mango
Instructions
  1. In a bowl, mix the chia seeds and almond milk together thoroughly and set aside to thicken.
  2. Next, in a blender, blitz the coconut water and mango together until smooth.
  3. See if the chia seed mixture has swelled a little, if so, stir in the mango and mix well. Cover and store in your fridge overnight for the next morning.
Notes
  1. You can add some shredded unsweetened coconut to this if you want!
